Recipe | Mango with mint

Something cold for the summer. 

It’s summer time and I’m having a hard time finding refreshment in my apartment that feels like a sauna at the moment. A while ago, it was mango-discount-time at my local supermarket. I got as many as possible, grabbing the last one from an old lady’s hand. In this blogpost, I will be sharing my easy recipe for a simple and cool mango dessert with mint. It is so simple that this should not even be called a recipe. Still I wanted to share this one because this is hands down one of the most amazing food combo’s I’ve ever tried. The mint and mango just magically goes so well together.


This recipe calls for just 3 ingredients: 1 mango, fresh mint and grated coconut (optional).



First step: dice up your mango. Then grab the mint and shred it into tiny pieces. The smaller, the better -that’s not what she said-. Mix the mint with the mango and put it in the freezer for an hour or so. This is where the magic happens as the mango gets slowly infused with the minty flavour. Meanwhile, the mango gets even more chilled which is perfect for these upcoming sunny hot days.

Once an hour is up, take it out of the freezer and garnish it with fresh mint leaves and top it off with grated coconut for the extra tropical feeling. You could pick the shredded mint out since they might become a bit soggy like mine, but I ain't got no time for that. If you do have time, pick them out, make a nice looking dessert for yourself. You deserve tha best. I think adding a bit of honey would be great too, but my mango was already incredibly sweet. Just like me. Actually, honey pairs with anything.
